Etimo by Begoña Fraire is born

Chef Begoña Fraire change of scenery and neighborhood to open her new Restaurante Étimo at the Madrid neighborhood of Salamanca, at 27 Ayala Street.

Begoña leaves her first Restaurant Seis Ocho to get into the heart of Madrid and be able to show off her cuisine at neighborhood where the capital’s gastronomy has some of its top representatives. It is in this breeding ground where she wants to develop the work that has been greatly recognized and praised by gastronomic critics and diners with great palate throughout these past years.

The new project encompasses interesting changes and many pleasant surprises, all without abandoning a philosophy that defines the chef as is the use of seasonal market products of the highest quality, vegetables, fruits, all without chemical intervention in the process of elaboration or manipulation, meats without animal abuse and the nature of the biological product as the hallmark of identity, leading to a healthy and quality cuisine.

Chef Begoña Fraire, who was trained at the prestigious French cooking school Le Cordon Bleu, creates a contemporary, creative cuisine where flavour marks her dishes, the result of her professional experience with some of the greatest chefs in our country and the continuous trips that she makes around the world and that nourish her gastronomic knowledge.
